Gun Dog magazine had a small article on hunt test in their latest issue.

I know nothing about them. All I could find was AKC said marked retrieves were really all that is tested on the juniors.

I guess my questions are:

What should my dog know before hand
What is required of my dog

I noticed it said age was not a factor. When do most start there pups for JH test?

I think most of your questions should be answered here:

AKC Junior Hunt Test:

Simply put, they'll throw 4 birds (separately & one at a time) and your dog needs to pick them up and bring em back.

Single marked retrieves up to 100 yards. 2 on land & 2 in the water (total of 4).

Deliver the bird to hand.

In Juniors, you can "lightly" restrain your dog by it's collar, but don't push it (hopefully your dog is fairly steady and obedient).

You are allowed to handle on one of the four birds, but hopefully your dog marks well enough so you don't have to.

If you have any specific questions, fire away. Also might want to do a little more research on this site and you'll find a ton of stuff.
