    I dont think a real chili is even suposed to have onions in it?

    Read the thread Brad, chili con carne was simple and made from available ingredients including onions but not beans

    Here in New Mexico, chili does not have meat OR beans. It has fiery roasted Hatch Valley chilis, broth of the cooks choice and that is it! You can get red, green or Christmas. If you want meat or vegetables then you order green chili stew. Each chef offers a different combo of pork, chicken, posole and potatoes. This is Chili!
