I have a gas grill but I use it only at gunpoint. A $10 electric charcoal lighter gets the coals going in 10 minutes and the flavor of the wood.................

I voted charcoal, but mist smoke with wood only....orange tree wood is my pick
gas grill? Why not just cook it over you gas stove burner?

I use a propane Weber, but I have a smoker box down under the grate over the flame. I put chips of apple, hickory and/or mesquite in there...It's about as close to charcoal as you can get, and a whole lot easier than dealing with charcoal.

Purists we are. We have an old smoker and we grill EVERYTHING over hardwood that we cut. We quit using charcoal and its equivalents over 10 years ago and never looked back. For those that state "convenience" of gas, why bother, cook it in the kitchen. For charcoal users, especially insta-light, happy carcinogen to ya! If you don't have wood to cut up, just pick up a little pack of fire wood. Much better!

We fire up the LP (propane) Weber grill almost daily during the summer evenings..... but when I have time to do it right, we use charcoal. So much easier to turn the propane on and hit the ignition. I can burn a couple of steaks, chicken, hamburgers and dogs - in a couple of minutes.
