OK. I would like to see you try the following rather than taking bumper like in first vid.
Let dog settle into heel/sit. Reach over his head and take hold of rope. Hold hand still while making dog continue to hold if necessary. (If dog drops before your give command make him fetch/hold)
With you holding rope ask dog to Give or Drop and let bumper "fall out" of dogs mouth. As it swings away take bumper behind dogs back and yours.
So, getting dog into habit of hold then "drop" to give you the bird will provide more benefits later on vs "taking" birds from dog.
Hope that makes sense.
