Here is one of our stand-by Easter Brunch recipes.
Sausage and Egg Casserole
9 x 13 baking dish, greased.
Bake 325 degrees for 1/2 hour covered, and another 1/2 hour uncovered. You can make this up the night before and refrigerate, or make it up and bake right away.
Layer in the dish:
1 package of salad croutons, whatever flavor you choose
2 tubes Jimmy Dean sausage, cooked/drained
Chopped onions, bell peppers, jalapenos, mushrooms, whatever you want is optional. You can sautee these with the sausage.
Beat together:
4 eggs
2 1/2 cups milk
1 can cream of mushroom or whatever cream of soup you choose
Pour over sausage layer.
Top with 1 cup or more of shredded cheese. Let is rest for 5-10 minutes after you take it out of the oven. Serve with sour cream, salsa, avacado slices, etc.
