There is a Cajun dish called Boulette. It is a cornbread type mixture, usually seasoned with onion and pepper, and often containing crawfish tails, formed into balls and fried until crispy.

Since my workplace is full of Cajuns, I asked around. Popular consenus is that it doesn't mean anything, kind of like the name Jones. Maybe it means something in Creole, however we have no Creoles around here to ask. By-the-way, the Secretary Of Racing at Evangeline Downs is named Jimmy Boulais.

How 'bout dem Cajun race horsing jockeys!?!

Looks like we goona have a ****-azz Triple Crown with all Cajun jockeys riding the winners! 8)

Horse racing and breeding is huge down here. There are five workout horse tracks within four miles of my house. A trip to Cajunland wouldn't be complete with a visit to Evangeline Racino. All those Cajun jockeys one sees of TV all got there start there.

Anyone remember Sylvester Carmouche, known as the fog jockey?

Its actually a ******* term translated “Bulls Ass”. For example a ******* may tell his lady “get your boulais, in the barn and throw down that hay.”

Primary reason ******** don’t live a long life…
