Our club is looking to host a seminar this summer. What we'd like to find and provide is a seminar regarding bird placement and or a training versus trialing setup type seminar.

Does anyone have a recommendation of who is providing seminars like this?

Yes, Mitch White of Gamekeeper Retrievers does a "Setups Seminar" where he talks about how marks and blinds influence each other, making each mark challenging (and why) and how to get the most out of your training setups. I attended one last year and really enjoyed it, and it made me really think about my training setups! His website is www.gamekprs.com
